How the turrón IGP category is calculated

The Jijona IGP and Alicante Turrón IGP specifications (MAPA 2023) require a minimum % of almond and of honey relative to the weight of the finished product for each category: Suprema (the highest tier), Extra, and below those thresholds the turrón falls outside the IGP. The calculator also evaluates the honey:sugar ratio (more honey than added sugar indicates higher quality) and whether it contains glucose, which in Jijona removes the "honey-only premium" seal.
