How to make a balanced ice cream
A good ice cream isn't made "by eye": it comes down to a few numbers. POD measures sweetness; PAC, how much it lowers the freezing point (whether it'll be soft or hard); total solids and fat, the creaminess. If they all fall within range, your ice cream will be creamy and scoop well. If they don't, this calculator tells you where to fix it.
