3 · Objectives
By the end of this masterclass you will know:
- What a base (50, 100, complete) exactly is and which decisions each one takes away from you.
- How to tell apart what you DO learn working with a base (the process) from what you do NOT learn (the numbers).
- How to take the three-question test that separates "executing a recipe" from "formulating".
- How to read your base's technical data sheet and work out what it is putting into each liter of mix.

4 · Theory content
4.1 · What a base is, without the marketing
A base is a powdered pre-mix that solves the hard part of the balance in one go: stabilizers and emulsifiers already dosed, milk solids, part of the sugars and, depending on the brand, fats (sometimes vegetable) and flavorings. They are classified by dose:

The more complete the base, the fewer decisions you make. And formulating IS making those decisions: how much sugar and of what kind, how much fat, how much solid, at what temperature you want to serve. With a complete base, those decisions were made by a technician at the factory who doesn't know your display case, your climate or your customers.
4.2 · What you DO learn with a base (and it isn't little)
Let's be fair, because this is not a sermon against the base. Working with a base you learn the process: pasteurize, age, batch-freeze, blast-freeze, hold the display case, serve. You learn cold, hygiene, production rhythm, dealing with customers. That is half the trade and nobody can take it away from you. An ice cream maker who works with a base and has a good process makes better ice cream than a theoretical formulator with a bad one.
4.3 · What you do NOT learn: the numbers live inside the bag
The problem is the other half. With a base, the numbers of the balance —total solids, POD (sweetening power), PAC (anti-freezing power), MSNF— are inside the bag, and the bag doesn't teach them to you. The technical data sheet gives you a dose, not an explanation. Concrete consequences:
- You can't diagnose. Sandy ice cream, gummy, coming out hard as a rock at −12 °C? Without the numbers all you can do is call the sales rep for the base or try things blind.
- You can't adjust. Lower the sweetness of your vanilla by 10 % without changing its hardness in the display case? That means working POD and PAC separately. With a base, you touch one thing and the others move without your knowing why.
- You don't own your menu. If tomorrow your supplier discontinues the base, raises the price or changes the formula (it happens, and they don't warn you), your ice cream changes and you don't know how to reproduce it.
4.4 · The three-question test
Ask yourself these three questions. No cheating — nobody is watching:
- Can you lower the sweetness of your vanilla by 10 % without changing its hardness in the display case?
- Can you explain why your lemon sorbet comes out harder than your chocolate at the same temperature?
- If your base disappears tomorrow, can you reproduce your ice cream with individual ingredients?
Three yeses: you formulate — this masterclass falls short for you, move on to Level 2. Any no: you are executing somebody else's recipe. That's not an insult, it's a diagnosis. And it can be fixed.
4.5 · The machine test: put your recipe into FormulaMaps
There is a quick way to see it with your own data: put your recipe with the base into FormulaMaps (the free version is more than enough: 3 recipes). The engine calculates solids, free water, POD and PAC for whatever you give it — and when a recipe contains a base or a paste with a heavy solids load, the diagnosis flags it: "low free water — looks like base/paste". The machine can't read what is inside the bag, exactly like you. That is precisely the difference between formulating and executing: when you formulate with individual ingredients, every number on the screen is yours and you know where it comes from.
4.6 · What the map says (and this is worth knowing)
GelatoMaps classifies the ice cream shops of Spain with a public rubric (v1.6, anyone can read it and reproduce it). Two things in that rubric that affect you if you work with a base:
- A product whose core is an industrial base has a ceiling of 2 scoops on the map's scale.
- The 3rd scoop requires proof of own production — formulating and making your own product, shown with evidence.
Careful how you read this: the scoops are decided by the audit using the public rubric; nobody promises them and nobody sells them — paying does not change scoops, it is the founding principle of the map. What is an objective fact is that the ceiling of someone who executes a base and the ceiling of someone who formulates their own product are not the same. Learning to formulate doesn't give you scoops: it takes away your ceiling.
4.7 · The honest path: from the base to your own formula in three steps
I'm not going to tell you "throw out the base tomorrow": you have a display case to fill and customers to serve. The path that works is gradual:
- Take your base apart. Get its technical data sheet and your delivery note. Work out what it contributes per liter (MSNF, sugars, neutral) and what that dose costs you at YOUR real price. With this step alone you already understand half the mystery.
- Replace it in parts. First the sugars (sucrose, dextrose, glucose powder: they are cheap and they are the lever for sweetness and for cold); then the milk solids (milk powder); the neutral last — it is the most delicate part and the one the base solves best.
- Formulate from scratch with a safety net. With FormulaMaps in front of you, every change shows you the effect on TS, POD and PAC before you spend a liter of milk. The first two modules of the course (M00 · the 100 base and M01 · the numbers of ice cream) are free, precisely so that you can try this step without paying anything.
4.8 · And the money?
You pay for the base twice: in the bag and in the dependency. With your delivery note in front of you (step 1 of the path), compare the cost of your dose per liter against the equivalent individual ingredients. In most workshops that do this exercise, the in-house formula comes out cheaper per liter — by how much depends on your brand, your dose and your volume, and that is why the practice in this masterclass is done with YOUR numbers, not with mine. And there is a cost that doesn't appear on the delivery note: a product you can't reproduce or adjust is not yours, and what is not yours can't be improved.
6 · Integrated practice
Task: take your base apart (with your numbers, not with mine)
- Get the technical data sheet of the base you use (your supplier is obliged to give it to you) and your latest delivery note.
- Work out what your dose contributes per liter of mix: grams of solids, declared sugars, stabilizers.
- Work out the cost of that dose per liter at your real price from the delivery note.
- Put your current recipe (with the base as an ingredient) into FormulaMaps Free and capture the diagnosis.
- Answer the three-question test from section 4.4 in writing.
Deliverable: the sheet with the calculations + the screen capture of the diagnosis + your three answers. It is the exact starting point if you later take the course: you will know where you are setting off from.
7 · Common mistakes
- Turning this into a war of camps ("base = bad, artisan = saint") → there are ice cream makers working with a base who have an impeccable process, and theoretical formulators who don't know how to batch-freeze → the trade is both halves: process AND numbers.
- Dropping the base all at once → a week of an uneven display case and lost customers → the path goes in parts (sugars → dairy → neutral), with your usual production running in parallel.
- Believing the base's technical data sheet is a formula → it is a list of doses, not an explanation; it doesn't teach you why → taking it apart (practice 6) is the first act of real formulation.
- Reading the map section as a promise of scoops → the scoops are decided by the audit using the public rubric; nobody promises them → the only thing guaranteed is that formulating takes away your ceiling, not that it raises you.

- Base (50/100/complete): industrial powdered pre-mix with stabilizers, solids and sugars pre-dosed; the number indicates the approximate dose in g/L.
- Neutral: a blend of stabilizers and emulsifiers; the part of the base that is hardest to replace well.
- POD / PAC: sweetening power and anti-freezing power of the sugars; the two levers the base decides for you.
- MSNF: milk solids-non-fat; the base contributes them without telling you how many.
- Free water: the water not bound to solids; if it is abnormally low, the engine suspects a base or a paste.
